Ingredients

  • 76 g White bread
  • 120 g Avocado
  • 80 g Strawberries
  • 16 ml Maple syrup
  • 4 g Pistachio nuts

Method

  1. Toast the bread slices until well golden and crisp — this is important as the toppings are wet and will soften the bread quickly.

  2. Spread the avocado evenly over both slices. You can layer the slices or mash with a fork for a creamier texture.

  3. Cut the strawberries into thin slices and arrange them evenly over the avocado.

  4. Crush the pistachio nuts into small pieces and sprinkle over the strawberries.

  5. Drizzle the maple syrup evenly over both slices and serve immediately.

Notes

Serve this immediately after assembling — the bread will soften fast from the avocado and strawberries, so don't let it sit. If you prefer a smoother base, mash the avocado with a pinch of salt before spreading. Fresh strawberries work best here; frozen will release too much water and make the toast soggy. Any nut works in place of pistachios — just make sure to crush them finely so you get a little crunch in every bite.
